Italian sausage is basically ground meat such as pork, beef, lamb, chicken or turkey which is then mixed with the lard (fat tissue found in pork), special seasonings, some preservatives and other interesting fillings.

After that they are packed into an artificial protein or genuine animal intestine casing. Most Italian sausage has raw garlic in it so baking it will make the sausage even sweeter.

If you decide to make your very own Italian sausage, one of the most important thing you need to keep in mind is to keep the meat at room temperature while you're working. If the fat begins to harden, making good sausage will be a very hard task indeed.

To do this, simple spread the meat out in oversized bins on the kitchen table and let it sit for about 30 minutes. After that, using your hands, spread the spices evenly on the meat. Remember to wash your hands well before and of course after handling the raw meat.
