Italian Sausage Casserole Recipe
Ingredients:
- 1 lb Italian sausage, casings removed
- 8 mushrooms, sliced
- 1 tablespoon butter
- 12 eggs, beaten
- 1 cup milk
- 8 oz Mozzarella cheese, shredded
- 1 medium red onion, chopped
- 2 medium tomatoes, peeled and chopped
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1/2 teaspoon oregano, crumbled
Instructions:
1. Preheat the saucepan and saute the crumbled sausage. Make sure that they are no longer pink then drain off the fat and put them aside in a bowl.
2. Now, saute the mushrooms and onion in butter until they are soft but not brown.
3. Stir in the sausage and add in the eggs, milk, Mozzarella cheese, tomatoes, salt, pepper and oregano. Stir fry them and mix well.
4. Transfer everything into a well greased 9 x 13 inch pan and bake ti for 35 minutes at 400°F (204°C).
5. Serve and enjoy!
